For industrial use, it is obtained by bacterial fermentation of sugars or from meat or sardines, having plant or animal origin. Inosinates and guanylates do not give the “umami” taste specific to glutamates, but have the ability to enhance a lot of natural flavors and tastes, thus allowing the required the required amount of salt to be reduced.
