Food additive in the category of natural colorants. It gives the color green and it is allowed to be used in any type of food, except those meant for infants and young children, according to the quantities provided by their recipes. This colorant can be found as E 141(i) – copper phaeophytin, soluble in water or E 141(ii) – sodium or potassium salts of copper complexes of chlorophyllin, soluble in oil. It is used in products subject to heat-treatment, process in which the copper is released.
