Food additive in the category of acidity regulators and wetting agents. It is the calcium salt of malic acid. It comes in the form of E 352(i) – calcium malate or E 352(ii) – calcium hydrogen malate. It is used in the quantities according to the recipes in dairy products, cheese and cheese substitutes, fat sprads, sauces, instant soups and broths, spices, products from fruit, vegetables, fish, meat, eggs, cereals, alcoholic and non-alcoholic beverages, sweets, ice cream etc.
